The Domaine Sarrat d'en Sol, from Occitan meaning Sunshine Hill, is at the foot of the Cathar castles and the border of Roussillon and Hautes Corbières. This family estate of 5 hectares, owned by Nicolas and Sylvie Brassou, consists of old Carignan and Grenache on clay and limestone soils. Syrah on slate ground complements the grapes of these wines of the Fitou appellation. The harvest is manual and each variety is vinified separately before assembly. The Domaine was born around a barn dating from the fourteenth century, surrounded by ancient vineyards and wild and unspoiled landscapes.
