Dominique and Joëlle Parayre decided to develop the viticultural activity of their family domaine in 1997. Built in an exceptional site overlooking the Carcassonne medieval cité on a gentle hillside rising above the Aude river valley, La Sapinière vineyard covers ten hectares surrounding the property's buildings.
Situated at the confluence of the region's two dominant climatic effects from the Mediterranean sea to the East and the Atlantic ocean to the West, La Sapinière blends two types of grape varieties : Three Atlantic varieties (75% of the vineyard) : Merlot, Cabernet Franc, Cabernet Sauvignon ; one Mediterranean variety (25% of the vineyard) : Grenache. Blowing nearly all the time, the Cers from the West is the dominant wind in alternance with the 'Autan' or 'Marin', both playing an important rôle in the ecology of the vines and the quality of the domaine's wines, contributing to the soil structure.
