The Domaine de Chamans is situated in the Aude department in the southern slopes of the Montagne Noire. The Domaine's 15 hectars are in a valley which is isolated from other vineyards,cultivated organically to develop the full authenticity and quality potential of the exceptional terroir (certified AB and Demeter). The Domaine's emblematic black sheep designed on the labels reminds us that the Languedoc region is capable of producing high quality wines which are different from well known classics.
A small flock of sheep eats weeds which grow between vine rows and fertilise the soil, naturally. Organic manure is added to enrichen the soil. There is, infact, one black sheep in the flock.
In accordance with priciples of organic and biodynamic agriculture, the domaine develops the best possible natural balance between the vines and their environment, the soil, wildlife, plants and planetary cycles. The vines producing red wines are between 25 and 50 years old, younger vines planted between 5 and 10 years ago.
The main varieties used are Grenache, Syrah, Carignan and Mourvèdre with a small vineyard planted in old Cinsault vines . To optimise quality, yields are maintained between 25 and 30hl per hectare. Harvesting is manual.
