Details
The Domaine de Cabrol is located 20 km north of Carcassonne, overlooking the famous medieval walled city. Of the 125 hectares of the domaine, 21 are cultivated in vines, the rest being left to nature (scrubland and woods). Claude Carayol, the enthusiastic owner, has been running the domaine since 1989.
The terroir is stony chalk on which the vine is more or less the only plant that can be cultivated under the hot climate. Winds blow almost all the time, either from the east (the 'Marin') or from the west (the 'Cers). The alternate climate enables the culture , in equal proportions, of Atlantic varieties, Cabernet Sauvignon, Cabernet France and Cot and Mediterranean varieties Syrah and Grenache.
With an altitude of up to 300 meters, temperatures are freshened at night and the contrast with day-time heat enables a regular ripening process of the grapes which develops the expression, complexity and finesse of the domaine's wines…
