Sparkling wines on Languedoc Wineshop : Blanquette, Crémant de Limoux and Méthode Ancestrale are the Limoux appellation 'bubbles' with, last but not least, the Crémant Rosé. The Blanquette méthode ancestrale, produced at the Saint-Hilaire abbey since the 16th century, is reputed to be the first sparkling wine to have been invented in the world. This Crémant is light cherry in colour with attractive, rich raspberry scents on the nose. Fresh and lively on the palate with subtle notes of red fruit and a delicate, regular sparkle, the Pinot noir develops the wine's length.
