Alain Cavaillès settled in Magrie in 1999, a stone's throw away from Limoux (Aude). He started by producing sparkling AOC Limoux wines : Crémant de Limoux, Blanquette de Limoux, Blanquette Méthode Ancestrale. His aim is to propose authentic wines of excellent quality produced with a constant concern for the natural balance of life cycles.
For Alain Cavaillès, "everything starts and finishes in the vineyard. Quality wines cannot be produced without quality grapes. The process of vinification must remain as natural as possible, simply developing the specific expression of the terroir."
In keeping with these principals he began the conversion of his vineyard to organic culture in 2009.
Magrie is a village on clay and limestone soil in the heart of the 'Autan' terroir. In the geographic centre of the Limoux Appellation, it is exposed to three, well balanced climatic influences : Mediterranean, Atlantic and Pyrenean. The domaine's wines are naturally well balanced, fresh with impressive aromatic strength.
