Maury, sweet natural wines on Languedoc Wineshop : TheMaury vineyards cover the black marl and black schist hillsides of the appellation's four villages ; Maury, Tautavel, Saint-Paul de Fenouillet and Rasiguères, North-West of Perpignan. These sweet natural wines are aged in oak, in tanks and in bottle for a periods ranging from 1 to 20 years, sometimes more according to the style of wine required. Over time, complex aromas develop the wines' subtle, complex bouquet. Some rare wines are aged in glass jars or large 600 litre casks stocked in the open air, thereby exposed to temperature variations and sunshine which accelerate the maturing process.
